My wifes E had the same problem. Both by using the sat nav and also with Appla carplay. It too us 6 months to get the problem solved. First all software as renewed and updated. Second the GPS antenna was replaced. For some time it worked fine but then the problems started all over again. The dealer had the car in for one week and confirmed there was still a problem.
Finally Honda Europe acknowledged the problem and agreed to replace the entire SATnav system under warranty. After that the sat nav and carplay worked fine. Until.......a week ago when the clock was set back to winter time. Same problem as before occurred. I will now have to contact the dealer again about the problem.
Honda e Sat Nav persistent issues
Ah yes /bump, I thought it was my wife's phone.
Just browsing other threads, about how to force use phone GPS (e isn't the only car).
The strongest solution (on other vehicles) seems to be unplugging the car GPS.
Given how developed your complaint is you must be way past this.
You could write a closed letter to honda UK CEO and get countersignatures from this forum, dm our names and plates, and give him a chance to personally address issue to a large number of his customers?
Even those of you for whom this works, it just might not have broken yet?

I don’t think this issue is limited to Honda, or indeed the e. A quick search sees many car owners of different brands with the finger being pointed at Apple, not the marque manufacturer. That said, my wife’s BMW has no issue accurately displaying location in CarPlay.
Solved for us.
It was the data cable.
This happened on several of our other cars and it's one of apples own suggested fixes. Apparently their lightning cable data transfer is fragile.
We had to buy a high quality 20 quid (10 quid in teekers) belkin cable, but it worked instantly.
In our old VW we ended up replacing the OEM VW cable twice.

It sounds like you had a much better experience with your Honda dealer. It's rare to find one that actually listens to customers. In my experience, unless the car logs a permanent error code, they tend to dismiss any issues reported by the driver.

have not read the forum for quite some time. Thanks everyone for your comments on the similar issues. Will try to push my dealer to replace GPS antenna next time I'm there. If that does not work - would probably have to walk away from Honda for good. so far my experience is exactly as the post above: unless they see error code they do nothing...
